How we can use wasted eggs for novel, gut-friendly product - Andrea Romero, Tummi Yummi

As demo day is on the horizon, the Food Innovation cohort is preparing for the final stages of the program. With October 13th coming fast, the SBC team decided to head down to Tasmania to check in with their FoodTech entrepreneurs.

One of the exciting companies at this year's Demo Day will be Tummi Yummi, created by solo-founder, Andrea Romero. It’s a probiotic egg invention that takes pure probiotic strains and infuses them into eggs. It is very similar to the concept of putting probiotic strains into yogurt, but instead, they utilise eggs as a reliable host.

Tummi Yummi is currently talking to potential partners in the egg industry to produce a value-added product. After exploring the local egg farms in Tasmania, Andrea discovered waste in the small and mid-market egg industry due to lack of capital to make use of eggs that were too small to fit into a carton (~1-5% of all eggs produced). Therefore, she decided that if her company could partner with egg producers, like Pure Foods Eggs, there was a chance that they could make a change for the better. Together, they could take the eggs that weren't fit for the grocery store and infuse them with probiotics to create new and beneficial products for the market. With this potential partnership in mind, Tummi Yummi could create both a delicious and sustainable product for the egg industry.

What exactly is this product?

Tummi Yummi and Pure Foods are currently looking to develop two new products. First, is a liquid probiotic egg product in a carton for people to easily make eggs for breakfast. Second, is a simple healthy egg bite dog treat to help dogs with their digestion and to build immunity. The Tummi Yummi team is planning on testing these two ideas out so they can start developing the products soon.

Being a part of SBC’s program, Tummi Yummi has had the opportunity to learn more about product market fit, prices, and pitches. With these three months under their belt, they have nailed down their finances, connected with food experts, and found ways to continuously enhance their products.
